Got Pineapple?

Its been a !.pretty boring cooking week this week. Nothing too adventurous. Today we had our annual family Corned Beef and Cabbage dinner at our house. I know St. Paddy’s Day is over but who cares. Corned Beef is the bomb diggity!  Mike and I have had it 3 times this month. So back to todays dinner…My mother in law wanted to make dinner. She lives by herself and was really itching to cook for us. So it was me,Mike,Mikes Mom Patty,Mikes brother Brian and our downstairs neighbor Jenny. I was put in charge of dessert (as always). I decided to try my hand at a Pineapple Upside Down Cake. I LOVE pineapple. I found a recipe from either my nan or her sister Agnes (uni). Either way it came out delicious! It was a little nerve wracking at the end because you have to flip it upside down,hence upside down cake. So heres the recipe.


Pineapple Upside Down Cake

1/2 C butter

1 1/2C Brown Sugar

1 20 Oz Can of Sliced Pineapple rings

10 Marashino cherries

1 Pkg of yellow cake mix


1. Melt butter over medium/high heat in a 10 inch oven proof skillet. I use a 10 inch cast iron skillet. When butter is melted remove from heat.

2.  Sprinkle the brown sugar over the melted butter. Make sure to cover the bottom.

3.  Arrange pineapple slices around the bottom of the pan. You should have 2 slices of pineapple left. You can eat those if desired. 🙂

4. Place a cherry in the center of each ring.

5. Prepare the cake. the cake will call for water,use as much of the leftover pineapple juice from the can. Then use the water. My cake directions called for 1 1/3 cups of water. I had 1/3 C of pineapple juice so then I used 1 C water.

6. Pour cake batter over the pineapple layer.

7. Bake as directed.  Cool for 10 minutes. Then this is where it gets tricky…You have to turn it onto a plate so the pineapple will be on top.


This maybe a great recipe to try for Easter.  I am still trying to figure out how to get pictures on here. Does anyone know how to do that?   So thats all for now. Hope this makes you happy Jess!


Monday Meatloaf Anyone?

SO I was supposed to have the day off today and I was going to try a new chicken recipe but my boss called last night and begged me to work from 3-6 today. I will save the chicken for a later date. So I decided to do meatloaf today. Its easy to make ahead of time and have Mike throw it in the oven before I get home. I came across this recipe on Its one of our favorite “Go-To’s”. We serve it with either mashed potatos or baked potatos and a veggie. It has a great ketchup,brown sugar and worshtshire sauce glaze on top. Enjoy!


Brown Sugar Meatloaf


1/2 C Brown Sugar

1/2 C Ketchup

1 Tbs Worshtishire sauce

1 1/2 Lbs ground beef or ground turkey

1/4 C milk

2 Eggs

1 1/2 tsp Salt

1/4 tsp Pepper

1 Small Onion

1/4 tsp Ground Ginger

1 C bread Crumbs


1. Preheat oven to 350 degrees and spray your loaf pan. if you don’t have a loaf pan you can shape the mixture into a loaf shape in a 13×9 baking dish.

2.  In a mixing bowl mix all ingredients except the brown sugar,ketchup and worshtishire sauce. Do not over mix or it will get tough.

3. Mix the ketchup mixture in a separate bowl. Spoon over the meatloaf before going in the oven. You can save some of the mixture and spread more over during the last 15 minutes.

4. Bake for about 1 hour

I make this for my work family and they love it! You can also add celery and carrots if your looking for a more healthy version. I hope you enjoy it!

Our Cooking Journey

Welcome friends! This is my first post of our “Culinary” journey. Maybe culinary isn’t the right word. I have not been to any sort of culinary school so I am no expert in the world of cooking or baking. Its just something i like to play with on the weekends. It seems like every weekend i am in the kitchen whipping something up. Friends and family say its yummy so i thought i would blog about it and share some of my favorite recipes. Not all of the recipes are mine. Some of them come from friends,family and just ones I stumble upon through various websites. I promise to give shout outs where they are due. If there is anything you would like me to try to whip up send the recipes my way. One a side note I am allergic to strawberries and refuse to touch any type of seafood, so that being said no strawberries or seafood.

I must also add that I am very technically challenged. I promise to post pictures as soon as i learn how to do it. I am also looking for a Blogging tutor. I need help posting pictures,Links,Etc. I am going to try to figure it out by playing around with it so we will see how it goes.

I also must admit that I do like to bake more than cooking. I get the baking bug from my great aunt Agnes AKA Uni. She was my grandmothers sister who Iwas very close to. Quite a few recipes come from her kitchen. I think she would be very honored that I am putting them to good use in a blog. She passed away long before blogs are around. I also have recipes from my Aunt Peggy. She was my mothers sister who passed away also. Peggy was my heart and soul. She too would be very proud of me. So Uni,Peggy this Blog’s for you!
